Probiotic & Enzyme Salad

Probiotic & Enzyme Salad

Cleansing Toxic Junk From Your Body!  WooHoo sounds like fun right??  I am determined to get my husband and I healthy.  Healthy enough for our bodies to help heal themselves.  Now there's an idea!  Get away from prescription meds, sleep well, wake up feeling refreshed instead of dragging tail around until our third cup of coffee, feeling energized and having clearer minds instead of terminal CRS (Can't Remember Shit).  I am determinded to get rid of the processed foods and massive amounts of sugar we consume (Really Jess, do you absolutely NEED 4 heaping teaspoons of sugar in your 8 oz. cup of coffee?).

Now let me be clear....I don't want this to be a deprivation of all of our favorite things and everyone that knows us knows I love to cook.  So, I am taking this as a gradual change and that way I can sneak a few things, healthy things, into my husbands diet each day.  He will be healthier and not even know what is happening!

For everyone else's info, I am adapting many of our changes from Kimberly Snyder’s first book, The Beauty Detox Solution: Eat Your Way to Radiant Skin, Renewed Energy and the Body You’ve Always Wanted (Harlequin) "has a no-nonsense approach, easily tailored to any lifestyle, where she explains how anyone can follow her three-phase program to look better than they ever thought possible. By adopting Snyder’s approach to health and beauty, anyone can reap the benefits of cleansing their system: weight loss, radiant skin, lustrous hair, and better overall health."

Shoot, you can;t beat that!!  One of the food items I am adding to our healthy lifestyle/food plan is this fabulous Probiotic & Enzyme Salad!  Here is a great excerpt from Kim's Book specifically about the benefits of this fantastic salad!  You'll understand once you read through this!!

"I cannot stress enough the importance of the Probiotic and Enzyme Salad in helping to make us more clean and balanced. This sacred and extremely nutritious salad. It is packed with enzymes and flora to increase our immunity and to restore us to a basic pH. It doesn’t take that much time to make, and it is the most inexpensive way to get daily probiotics. This is especially important for those of you that can’t afford probiotic supplements, which can definitely be expensive. Cabbage is very inexpensive, so there is no excuse to not make this salad!!
Imbalanced intestinal flora is one of the root causes of disease and is essential to replenish to achieve true health and therefore true beauty. This powerful salad will lead to improved Beauty Energy and ongoing cleansing. Most importantly, it will aid you in clear up any digestive blockages or irregularities that you are experiencing. It is great for those with Candida and sugar cravings.
Probiotic & Enzyme Salad is essentially raw sauerkraut and is made with green cabbage, miso paste or sea salt, and optionally flavor add-ons like ginger or carraway seeds. The raw, cultured veggies that are chopped and sealed in airtight containers for a few days. Sealing and storing the cabbage creates an environment for lactobacilli and enzymes in the vegetables to flourish, creating a probiotic-rich food. Pretty cool, right? Cabbage in itself has natural probiotics, is packed with vitamin C, and has natural cleansing properties. I love that that it’s so easy to make and is a yummy, tangy accompaniment for any meal.
Sauerkraut usually stirs up images of a soppy, salty condiment that adds flavor to various meats, but this is not what you are making here! It’s time to break the stereotype and open up your mind to the possibility of delicious, nutritious and beautiful foods that benefit the body and the mind. Probiotic & Enzyme Salad is the most powerful tool you can use to get there!
Remember, the fermentation process to create all of those healthy nutrients takes about 5 days so when you start to run low, be sure to whip up a new batch. You can store sealed jars of salad in the refrigerator for up to a month or so, once the seal has been broken, it will keep for up to 1 month. Probiotic & Enzyme Salad should be a core staple of your Beauty Detox by including ½ cup for dinner each night and also at lunch when possible.

Like I said, you can't beat those kinds of benefits!!

Probiotic & Enzyme Salad

1 medium head of green cabbage, shredded in food processor or finely sliced
8 cabbage leaves, unshredded
4 cups of water
4 inches gingerroot, peeled
1 Tablespoon of unpasteurized miso paste (use high quality sea salt if you can’t find the miso)

Place the shredded cabbage in a large mixing bowl.
In your blender, mix water, gingerroot, and miso until smooth.
Pour liquid ingredients over cabbage.
Pack the mixture tightly into four 24-ounce glass jars you have sterilized in boiling water. Use a wooden spoon to ensure it is well packed.
Leave two inches at the top of the jar so the mixture has room to expand.
Roll the outer cabbage leaves into tight rolls and place them on top of the mixture, filling the remaining two inches.
Tightly close the jars.
Leave the jars in a pantry for five days at a temperature of around 65 to 70 degrees. The cabbage will begin to ferment.
After five days, remove the rolled cabbage leaves and refrigerate the jars.
Eat ½ cup of the salad at dinner every night. The sealed jars keep for up to one month in the refrigerator.

Nice and comfy place in the pantry for 5 days!
