Probiotic & Enzyme Salad
Cleansing Toxic Junk From Your Body! WooHoo sounds like fun right?? I am determined to get my husband and I healthy. Healthy enough for our bodies to help heal themselves. Now there's an idea! Get away from prescription meds, sleep well, wake up feeling refreshed instead of dragging tail around until our third cup of coffee, feeling energized and having clearer minds instead of terminal CRS (Can't Remember Shit). I am determinded to get rid of the processed foods and massive amounts of sugar we consume (Really Jess, do you absolutely NEED 4 heaping teaspoons of sugar in your 8 oz. cup of coffee?).
Now let me be clear....I don't want this to be a deprivation of all of our favorite things and everyone that knows us knows I love to cook. So, I am taking this as a gradual change and that way I can sneak a few things, healthy things, into my husbands diet each day. He will be healthier and not even know what is happening!

Remember, the fermentation process to create all of those healthy nutrients takes about 5 days so when you start to run low, be sure to whip up a new batch. You can store sealed jars of salad in the refrigerator for up to a month or so, once the seal has been broken, it will keep for up to 1 month. Probiotic & Enzyme Salad
1 medium head of green cabbage, shredded in food processor or finely sliced
8 cabbage leaves, unshredded
4 cups of water
4 inches gingerroot, peeled
1 Tablespoon of unpasteurized miso paste (use high quality sea salt if you can’t find the miso)
Place the shredded cabbage in a large mixing bowl.
In your blender, mix water, gingerroot, and miso until smooth.
Pour liquid ingredients over cabbage.
Pack the mixture tightly into four 24-ounce glass jars you have sterilized in boiling water. Use a wooden spoon to ensure it is well packed.
Leave two inches at the top of the jar so the mixture has room to expand.
Roll the outer cabbage leaves into tight rolls and place them on top of the mixture, filling the remaining two inches.
Tightly close the jars.
Leave the jars in a pantry for five days at a temperature of around 65 to 70 degrees. The cabbage will begin to ferment.
After five days, remove the rolled cabbage leaves and refrigerate the jars.
Eat ½ cup of the salad at dinner every night. The sealed jars keep for up to one month in the refrigerator.
Nice and comfy place in the pantry for 5 days!
